This coffee is from Cooperative AECAR (an acronym for
Asociacion Ecologica de Caficultores Rosario entre Rios).
The Co-op is made up of 164 small farmers whose land
averages 3 acres and is cultivated at an altitude of 4,900 -
6,000 feet above sea level. Overall, these are delicate,
bright coffees, and aromatically sweet. They have subtle
fruit flavors, like pear, apple, apricot, tangerine, lemon.
They can develop roast flavors that are malty, mild
chocolate, nutty, caramelly and honeyed. As the cup cools
the best flavor emerges, and grows in intensity revealing an
excellent body with a note of sweet cinnamon.
